Cooking up a storm! 

In more ways than one. It has been raining since at least 5:30 this morning. I don't think it has stopped at all. And the forcast calls for rain pretty much every day for the next 10 days. Inspired by the cool weather, I did a ton of cooking today to get us through the rest of the week: ground turkey enchiladas, meatloaf, pasta salad, and chicken parmesan. I thought of baking an apple pie (Liz got the idea in my head!), but I just bought a tub of bakery cookies at the store, so I think I'll save that for the weekend. I plan on making this "country version" of coq au vin on Sunday. Apple pie might make a great dessert for the meal (or maybe I'll make my rustic apple crisp; I think the hubster likes that a little better).

I also admitted defeat today: a failed culinary experiment. A few weeks ago I was talking with a woman at the store who was telling me how she was going to make peaches in cabernet later that day. She told me how wonderful it was, how the peaches add so much sweetness to the wine (you use the cheapest cabernet sauvignon you can find) and it makes a fantastic summer dessert. So I bought some peaches, dug up a canning jar, and since I didn't have an open bottle of cab, I substituted merlot. I followed her instructions, let the fruit soak in the wine for a few days, then tried a peach slice. It was really, really gross. Bitter, even. I decided to add some sugar and see what happened. Well, I gave them a try today and they just are not good. Not sure if I just don't like the flavor, or if it was the wine, or if the recipe would be better with canned (not fresh) peaches. I think I'll stick to poaching pears when I want to mix up my fruit and wine.

hmm... I have some ground turkey... maybe I"ll make enchiladas tonight. Apple CRISP! I love fall. :D Our cool weather is sticking around, yippee!

I made Jeff some apple strudel today. I'm surprised that I had the energy. But I wanted to surprise him with it when he gets home from his business trip. I love how cool our weather is!

ohhh I gotta try that counrty verison of that chicken recipe... that looks tasty... sorry about the icky peaches... peaches in general are gross in my book lol...
